Kitchen design has many challenges as often there is no good place to relieve kitchen and cooking exhaust systems. In many applications odors in the exhaust can be objectionable to the surrounding space where the exhaust leaves the building. Often times grease ducts must be routed through the building to get the exhaust to a location where these odors can be relieved. The Halton Ecology Units (scrubber of kitchen exhaust to remove objectionable odors, grease and smoke from kitchen exhaust) were applied on this project to allow the kitchen exhaust to be relieved through a sidewall of the building without exhausting objectionable odors.
